Crab soup cake (Banh canh cua) in Saigon

There are many kind of noodles in Vietnam and it is easy to find them from these  luxury restaurants to street food stalls or food court in the shopping malls. The most famous soup noodles is Pho (beef noodle) – the speciality in Vietnam cuisine. Today, I want to introduce another version of noodles. It is Crab soup cake (Banh canh cua).

Why I didn’t call it as crab noodles soup? Actually soup cake is similar with noodles soup. The difference is from the thickness and the length of noodles. With soup cake, the noodles of it is the most thickest and quite short. Some people even do not use the chopsticks while eating. That is the reason we called this food is “soup cake”.

Crab soup cake is very popular with local people. The gelatinous broth is cooked from pork bone, crab and mushroom. The toppings are including boiled crab meat, boiled shrimp, pork meat, crab pie, quail egg. The last addition are black pepper and chopped green onion will make soup cake is tastier and more eye-catching. Normally, serving with this dish is fish sauce with chili.
