Spring roll is one of the popular in Vietnamese cuisine. It is one of of Normally, there are two kind of spring rolls : deep fried spring rolls ( “cha gio”) and fresh spring rolls ( “ bo bia” or “ goi cuon” ). The difference depends on the cooking style and the inside ingredients. Today, I want to introduce you another version spring roll which I have tried last night – this is NEM CUA BIEN – crab spring rolls.
Nem Cua Bien – Crab Spring rolls
Known as a specialty of Hai Phong, a famous port city in Vietnam. Nem Cua Bien is not only to satisfy your taste but also bring you a little sea breeze from a beautiful coastal town. The inside ingredients is the point to create the charm of this food. They are included crab meat, lean pork, egg white, carrot, ear mushroom, bean sprout, rice paper and vermicelli. Firstly, we will make the stuffing by combining almost the ingredients with fish sauce and black pepper. The next step is wrapping by rice paper. A small tip is that it is easy to make a nice shape of Nem Cua Bien if rice paper is soft, leathery. After that, drop spring rolls into boiled oil then wait until they turn golden brown. This food is served with fresh rice vermicelli, lettuce, cucumber and a sour spicy fish sauce.
